Bakers Pride, founded in the mid-1940s, created an exciting new method for the preparation of pizza. In doing so they changed pizza from a food enjoyed mainly by an ethnic minority into a favorite of national cuisine. Bakers Pride apparently invented the modern commercial pizza oven. Before this invention pizza was prepared in massive, hand built brick ovens fired by coal by a few skilled culinary experts.

The development of a factory built oven enabled mass production. The gas-fired ceramic deck of the transportable pizza oven made it convenient to operate. Innovations continued to refine the oven. These included precise temperature controls, uniform distribution of heat, and energy efficient burners.

Bakers Pride states their mission as, “…to be the leading supplier of quality pizza and bake ovens, char broilers, conveyor ovens, and convection ovens to the global commercial food service industry.”

Yet the products even of premium brands with exemplary company histories sometimes need repairs. Following are some of the most common oven malfunctions:

– The Pilot Light Won’t Stay Lit: The thermocouple is usually at fault. It must be directly in the flame. If not it won’t get hot enough to open the safety valve. If it is in the flame and the pilot doesn’t stay lit a defective thermocouple may be the culprit and must be replaced. If the pilot light will not stay lit even after the installation of a new thermocouple, the safety valve may be defective and will have to be replaced. Some thermocouples and safety valves are attached so the whole unit will sometimes have to be replaced.

– The Oven Won’t Get Hot Enough: The thermostat is normally the problem. It may either be defective or the calibration is off. A thermometer known to be accurate is necessary to check the calibration. If the calibration cannot be reset the thermostat will probably have to be replaced. Since factories preset all thermostats before delivery the replacement will usually not need calibration.

– The Oven Gets Too Hot: This too is also usually caused by a faulty thermostat. The same calibration procedure given for an oven that won’t get hot enough should be followed. As in that case, a new one should reduce the heat to the desired temperature.

– The Oven Doesn’t Cook Evenly: This often occurs after the installation of a new thermostat. A capillary tube with a bulb at the end is fitted on each new thermostat. It is necessary to sense the temperature inside the oven. Clips inside the oven hold the bulb in place. If the bulb is not placed properly, that is if it is just stuck in randomly and left hanging, the thermostat will perform unevenly and the oven will still cook unevenly.
